Most cacao oils are dark in color and made of cacao beans that have been roasted and roasted again, making them oxidize and loose their subtle aromas, leave alone the fact that they are mostly all made of hybridized commercial strains of cacao. Our Cacao oil starts with a small family of artisan and a great "know how". Peru is well know for its amazing variety of wild cacao, The process involved is quite different from the deep roasting of the western chocolate technique, instead, what is sought to be extracted here is all the deep subtle notes of the raw wild cacao bean, basically all the elements that are destroyed by roasting. The key is that its all in the butter, and thats why its a clear oil and not a dark chocolate one.
